We first tried these ‘bloody good smoothies’ with lunch after long rides on Halloween weekend. Last night was our first dip below freezing here in New York, and based on the forecast it looks like it’s going to get too consistently cold for frozen smoothies starting… today. But since beets are still in season these will be on the menu one last time this weekend, and I wanted to share here as well – these are too good to miss, even with the chill in the air.
This recipe is delicious and not too filling. Sipping seems to instantly make you feel healthier, stronger and somehow, more alert. Their vibrant color gives it away – beets are vitamin and mineral powerhouses.
For Two Beet-Ginger Powerhouse Smoothies:
Into a blender put:
– 1 Small or 1/2 a large (raw) Beet, peeled & chopped into approximately 1″ cubes
– 2 Frozen Bananas*
– 1 Cup Frozen Strawberries
– 1 Inch Fresh Ginger, Peeled
– 1/2 Cup Orange Juice
– 1/2 Coconut Water
And blend! Add some regular water if necessary to complete blending.
Then, dive in!
*Tip: Having pre-cut frozen bananas comes in handy. Ziplock bag storage is easier in this case than a container, b/c the bananas can stick to the container and be more time consuming to remove. (You can always re-use the ziplock for more bananas – the bags actually stay clean since the frozen fruit leaves little to no residue.) Freezing bananas whole is tempting at the end of busy days, but overall less efficient since they’re so much easier to cut at room temp.
