Carrot Gogi Berry Muffins

This lushcious discovery will likely remain our favorite muffin recipe for a long time.  My husband stopped in his tracks after one bite and I ate two myself before they were even cooled from the oven.

I’d consider this a Rest Day recipe, since it takes a little extra hands-on time due to the grated fresh carrots.  I used a microplane, which is slow going worth it for the super soft texture.  Plus, the recipe makes 12 large muffins so you’ll be covered a little longer.


This muffin genius comes courtesy of Little Spice Jar (you can see the original recipe here: Little Spice Jar) plus a few of my own tweaks:

– Use flax eggs instead of chicken eggs

– Use Gogi berries instead of raisins

– Oats omitted from topping

Soft texture created with finely shredded coconut and carrots (vs larger grater):
